Featured Recipe of the Week: Bangin’ Shrimp Skewers

I’ll admit I’m not a huge fan of seafood, but oddly enough I LOVE the taste of shrimp on the grill. With the right marinade, even this non-fish lover can’t get enough of this yummy taste!This recipe for Bangin’ Grilled Shrimp Skewers from Skinny Taste is sure to have your mouth watering. The creamy chili sauce combines the flavors of sweet, salty, and spicy for an amazing and easy to make appetizer. Just put the shrimp on the grill with whatever else you’re cooking up, brush on the sauce, and you’re done!

Ingredients:

(For the sauce)

  • 2 ½ tbsp light mayonnaise
  • 2 tbsp scallions, chopped fine
  • 1 ½ tbsp Thai Sweet Chili Sauce
  • ½ tsp Sriracha

(For the shrimp)

  • 40 large raw shrimp, shelled and deveined
  • Fresh cracked pepper
  • Oil spray

Directions:

Combine all of the above ingredients for the sauce and stir in a small bowl, then set that aside. Soak the wooden skewers in water for 20 minutes and season shrimp with pepper (lightly).Then place 5 shrimp on each skewer. Heat grill and add shrimp, grilling on both sides for about 6-8 minutes total cooking time. After removing shrimp from the grill, immediately brush sauce onto the shrimp and serve!
