Featured Recipe of the Week: Salted Caramel Apple Cupcakes

Labor Day weekend has passed and the kids are back in school, it’s safe to say most of us are in the Fall spirit. For some of us the proof is in the coffee. When you can get your hands on cider and pumpkin lattes at your favorite coffee shop, Fall is in full swing! These cupcakes are the perfect way to bring that fall spirit home to the kids. They’re sure to get them in the apple-picking and pumpkin carving mood (maybe I’m getting a little ahead of myself here). Nothing will combine all the best flavors of fall into one treat like these

Apple Cider Cupcakes with Salted Caramel Buttercream from SomethingSwanky .

Ingredients for Cake:

  • 2 eggs
  • 1 2/3 cup AP flour
  • 1 cup apple cider
  • 2/3 cup sugar
  • 1/2 cup butter, softened
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. vanilla

Directions for Cake:

Whisk together all ingredients then fill cupcake liners 2/3 full and bake at 350º for 19 minutes.

Ingredients for Salted Caramel Buttercream:

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 5-6 tbsp. melted caramel
  • 1 tsp. salt
  • 4 cups powdered sugar

Directions for salted caramel buttercream:
In a stand mixer, cream together the butter and shortening. Add the powdered sugar and the caramel alternately (add the salt in with the caramel), mixing after each addition.
